However, whilst we are proud of all our drinks, our Cacao Gin is a firm favourite. A distilled London gin infused with cacao, its gin perfection in a bottle. For best results, serve with tonic, ice, and a slice of orange and pair it with any of our orange chocolate. The York Gin uses the London Dry method which means distilled spirit and the botanicals all go into their magnificent copper still named Ebor, named after the Roman name for York, Eboracum. We say: It's not sweet, but it wavers on the sweet side of balanced, so I'd recommend enjoying after a meal. But it’s not just our Cacao Gin which is popular. Stieven Victor, director of Xolato, told the Martini Whisperer: ‘We wanted to make something different from everything that was out there and were already into chocolate with our Belgian chocolate brand Xolato. We say: White crème de cacao's sweetness is balanced by dry sherry and the acidity of Sauvignon Blanc wine which also adds grassy floral notes. We say: Spirit-forward, lightly chocolaty and bourbon-laced with subtle zesty orange and herbal notes. The first batch of gin from the Harrogate Tipple Distillery was released at RHS Harlow Carr in October 2016. Originally produced in an old Smokehouse in the centre of Harrogate, Premium Harrogate Gin is now distilled at Harrogate Tipple’s new distillery on the Ripley Castle Estate.
